(Bread filled with a curry) – A Traditional South African Dish
Ingredients & Recipe
Buy mini rolls or make own bread rolls that you bake in used tins, hollow out the bread and fill it with curry.
Serve with fresh coriander and salad
Ingredients for the curry:
1 kg lamb/ beef/ chicken pieces/ beans
Oil to fry
2 large cinnamon sticks
1 teaspoon fennel seeds
1 bay leave
6 cardamom pods
1 teaspoon crushed fresh chillies
1 large onion diced
½ teaspoon turmeric
2 tablespoons crushed ginger and garlic mix
1 tablespoon vinegar
2 teaspoons white sugar
3 teaspoons medium curry powder
1 teaspoon garam masala
2 tomatoes blended
5 small potatoes, peeled and cubed
Chopped fresh coriander
Salt to taste
Heat oil in a pot, add cinnamon, cardamom, cloves, bay leave and fennel seeds and stir.
Add the chillies, onion, turmeric, ginger and garlic.
Braise for 3-4 minutes.
Add the garam masala and spices to the pot.
Add the vinegar and sugar and mix well.
Add the meat and salt.
Mix until the meat is coated with masala.
Cover pot and braise on moderate heat for a few minutes.
Stir from time to time, until meat is soft. Add the potatoes, add water when ever needed, don’t let it burn out.
When potatoes are al dente, add the tomatoes. When potatoes are cooked, stir and add coriander.
Once all is cooked you can place curry into your bread.
